Ragin' Cajun!

Well, the cooking club got up and going this week! We got together Friday night and made some authentic Cajun food. It was delicious!!  We started with tempura okra w/ dipping sauce. Yum!  The main dish had many elements. It was stuffed pork tenderloin served over red beans and rice. We got the beans going first. Then we worked on the collard greens which were then "stuffed" (actually, they were rolled) into the tenderloin. Then there was bread pudding for dessert. The bread pudding didn't quite come out right. The one of us (yours truly) who put it in the oven neglected to check the temperature AND timer. Oops.

I think we were all pleased with how the first cooking session ended up. We had a blast and enjoyed some good food. We are going to learn how we best work together and how we can organize better the more we cook!
